Stuffed eggplant Ingredients: Eggplant 2 pcs; Minced meat 300 gr; Onion 1 pc; Pepper (Bulgarian 1 pc; Tomato 1 pc; Tomato 1 tablespoon; Spices (salt, pepper, sugar); Garlic 2 tooth; Greens (cilantro and purple basil.) Cooking: My eggplants and cut in half. We make not deep cuts, salt and leave for 15 minutes. Remove the resulting liquid with napkins. Grease with oil and send to the oven. Bake at 180-200 gr for 20-25 minutes. (until golden brown) ⠀ For the filling: Fry the minced meat, add onion, pepper, tomato and garlic. Fill with diluted tomato in water or grated tomatoes. Add salt, pepper and sugar to taste. And simmer for 10-15 minutes. Turn off and add greens. Knead eggplants with a fork and stuff with filling.
