Salmon in a creamy sauce with tomatoes and spinach Ingredients (for 2 servings): Salmon fillet – 2 pcs Olive oil – 2 tbsp. Butter – 3 tablespoons Garlic – 3 teeth. Cherry tomatoes – 200 gr Fresh spinach – 60 gr Fresh basil – 5 gr Parmesan – 25 gr Cream – 120 ml Salt – to taste Lemon wedge Preparation: Heat the olive oil over medium heat. Season the salmon and fry the sirloin side down for 6 minutes. Then turn over and fry skin side down for 2 minutes. Put the salmon, put the butter in the pan, melt, add the chopped garlic and fry for 1 minute. Add cherry tomatoes, cut in half, season with salt, then add spinach and basil and simmer for 3 minutes. Add cream and parmesan, simmer for another 3 minutes. Reduce heat and simmer for another 3 minutes. Place the salmon in the sauce, pour over the sauce and simmer for 3 minutes.
