Seasonal vegetable pasta Ingredients: 1 zucchini 1 tomato 2 cloves of garlic 2 tbsp ricotta 200 g pasta of any shape 30 g hard cheese small bunch of parsley Salt, pepper olive oil ⠀ Cooking: ⠀ Cut the zucchini into thin slices using a vegetable knife or just half rings … Cut the tomatoes into large cubes, and the garlic not very finely. Boil pasta in salted water for 2 minutes less than indicated on the package. In olive oil over high heat, quickly fry the garlic, zucchini and tomatoes. Salt and pepper. Add ricotta, ladle of pasta water and stir gently until smooth. Transfer the pasta to the vegetables, mix well and boil the sauce just a little. Sprinkle the pasta with grated cheese, parsley and mix well. You can serve it with grated cheese and herbs. ⠀ Real Food | # lunch # dinner.
